Summer Soups are soooo good!
Because it’s still summer weather out there, I wanted to share one of my favorite summer soups. My sister, Amy, concocted this last year, and I have been begging her for the recipe. Well, here it is. If you love the refreshing coolness of summer soups, then try this one out:
Pineapple Gazpacho Soup
(always play with the ratio of ingredients for your own tastes, and use organic whenever possible!)
- One medium red bell pepper
- One cored pineapple
- 3/4 to whole of English cucumber (they are the wrapped in plastic ones at the store—their skins are digestible where regular cucumbers aren’t)
- Chunk of red onion
- Juice of two limes
Process until chunky-smooth in blender or processor.
Maybe garnish with cilantro
